A quick note before I start: I admit that this looks like a pretty unusual combination, and I did have to go more with personal correspondences than classical correspondences. But I really liked the results! Most of the flavor comes from the molasses, and the beets add a subtle earthiness and a pretty color. Also, while I wouldn’t go so far as to call this health food, molasses and beets both
contain a lot of good nutrients (especially iron).

• 1 c milk
• 1 small beet
• A pinch of salt
• 2 Tbsp unsweetened cocoa powder, sifted
• 1 Tbsp blackstrap molasses, or more to taste

1. Wash the beet, then boil it until tender. When it’s done, drain and let it cool slightly.
2. Peel the beet and chop it roughly, then put it in a blender with a couple tablespoons of water and blend it into a puree, adding more water if necessary.
3. Combine the milk, salt, and 1 Tbsp of beet puree in a small saucepan.
4. Heat until the milk is just simmering.
5. Gradually whisk in the cocoa powder, then the molasses.
6. Taste and adjust seasonings if necessary, then strain into a mug.
